Recipe
225 butter
100g sugar
2 tbsp stevia sweetener
75ml FGS vanilla recovery
280g plain flour
60g cocoa
Tsp cinnamon
Tsp nutmeg
Pinch salt
Optional: chocolate chunks, m&ms or smarties to decorate.
Method
Cream together the butter, sugar and sweetener in a freestanding mixer or with a handheld mixer until pale/fluffy.
Combine the flour, cocoa, spices and salt in a bowl and a tip into the butter/sugar mix. Add the shake and some chocolate chips (optional) and combine into a dough.
Roll into small palm sized balls and lightly press into a lined baking tray to form cookie shapes. Don’t flatten too much.
Bake at 180 c for 10 mins, then remove from the oven and quickly press a few m&ms/smarties into the top of the cookies. Then return to the oven for a further 4 mins.
